Our Story

For seventeen years now the great Pat Hyland, also known as Paddy Jack, has been producing his wide range of distinctive cheeses from his farm in Cuffsboro,
Co Laois.

With over ten years experience trading in the Temple Bar market he seems to know just what his customers want and his attention to quality, detail, and taste have made him something of a local legend in Dublin, Ireland. When it comes to his products, Pat is known for always using the phrase “People can taste the effort you put in.”

Paddy Jack would go to great lengths to guarantee that his cheeses were the absolute best in all of Ireland. One story has him traveling over 1000 miles to retrieve one of his cows that had been scooped up by a tornado. Another tale tells of Pat hiding all of his top secret cheese recipes in the caves below Dublin. His cheeses are his passion and his passion is his life.

We have adopted Pat Hyland’s mission, been inspired by his passion, and can’t wait for you to taste our effort.
